½ cup unsalted butter

½ cup cannabis-infused butter

1 box yellow or white cake mix

1 3.4-ounce package instant pistachio pudding

3 eggs

1 cup lemon-lime seltzer or soda

3-4 drops green food coloring

1 cup chopped pistachios (for garnish)

1 cup flaked coconut (for garnish)


1 and ½ cups heavy whipping cream

1 3.4-ounce package instant pistachio pudding

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Line cupcake pans with paper cupcake liners. Put them aside for a while.
  3. Use a double boiler to melt regular and cannabis-infused butter. Put it aside.
  4. Put cake mix into a medium mixing bowl.
  5. Add instant pistachio pudding.
  6. Use an electric mixer to combine the ingredients.
  7. Add the melted butter mix and turn the electric mixer on low.
  8. Lightly beat eggs and add them to the butter and pudding mass.
  9. Combine the ingredients.
  10. Then, slowly mix in lemon-lime seltzer or soda.
  11. Once the lemon-lime seltzer or soda is fully incorporated, add a few drops of green food coloring and mix. A tip here: The batter should be very thick.
  12. Measure even dollops of batter into the prepared baking cups with the help of an ice-cream scoop, tablespoon, or rubber spatula.
  13. Once each cup is about ¾ full, place the cupcake pans in the preheated oven.
  14. Bake the cupcakes for about 20 to 25 minutes.
  15. When a toothpick inserted in the center of a cupcake comes out clean, you can remove the cupcake pans from the oven.
  16. Let the cupcakes cool down completely.
  17. Spread the chopped pistachios on a baking sheet.
  18. Reduce oven temperature to 300 degrees Fahrenheit.
  19. Place the baking sheet with pistachios in the preheated oven for 10 minutes.
  20. Then, add flaked coconut and bake for 2 more minutes.
  21. Remove the baking sheet from the oven.
  22. Use an electric mixer to whip heavy cream. Use a high-speed mode for about 5 minutes until soft peaks form.
  23. Add instant pistachio pudding and a few drops of green food coloring.
  24. Thoroughly mix all the ingredients. A tip here: It is very important to use the icing as quickly as possible, otherwise it becomes too thick to spread.
  25. Top each cupcake with the creamy icing and sprinkle the baked pistachio and coconut mix on top.
  26. Serve.
