Ingredients

1 cup organic virgin cannabis-infused coconut oil

1 tablespoon organic raw honey

1 teaspoon organic vanilla extract

2 teaspoons organic peppermint extract

1 and ½ cups organic chocolate chips

Instructions

  1. Warm up honey.
  2. Place a saucepan on the stove and turn on low heat.
  3. Put cannabis-infused coconut oil into the preheated saucepan and melt.
  4. Pour the melted cannabis-infused coconut oil into a medium mixing bowl.
  5. Add warm honey, vanilla extract, and peppermint extract.
  6. Use a whisker to combine all the ingredients.
  7. Once the mixture is completely blended, put it into the freezer.
  8. Let the mixture sit in the freezer for 10 to 15 minutes until slightly hardened.
  9. Line a baking sheet with parchment paper.
  10. Divide the mixture into 24 even pieces.
  11. Roll the pieces into balls. A little tip here: The weight of each ball should be approximately 15 grams.
  12. Place the balls on the lined baking sheet.
  13. Use any flat object to flatten the balls to form ½-inch thick discs. A tip here: It is better to rinse the flat object you are using with warm water between the flattening to prevent sticking.
  14. Place the baking sheet back into the freezer for 15 to 20 minutes until the disks are hard.
  15. Meanwhile, use a double boiler to melt chocolate chips.
  16. Turn on low temperature and stir the chocolate chips occasionally to prevent burning.
  17. Once you get a smooth chocolate mixture, remove the pan with the chocolate and let it cool. A tip here: It is very important to make chocolate soft but not solid.
  18. Remove the baking sheet with the patties from the freezer.
  19. Dip each cookie disc into the melted chocolate and put it back on the baking sheet.
  20. Place the baking sheet into the refrigerator and let the patties sit there for about 15 minutes.
  21. Remove the patties from the refrigerator and serve.
