Recipe: Homemade Weed Cauliflower Soup

Ingredients

½ whole onion (Spanish or white)

2 whole carrots

2 stalks celery

2 whole cauliflower heads

2 tablespoons fresh or dried parsley (chopped)

Salt (to taste)

Pepper (to taste)

2 boxes vegetable broth (low-sodium)

6 tablespoons flour (all-purpose)

2 cups whole milk

1 cup half-and-half

4 tablespoons butter (regular)

2 bay leaves

¾ cup Parmesan cheese (freshly grated)

1 cup sour cream (room temperature)

Instructions

  1. Finely dice a half of an onion. Put it aside for a while.
  2. Finely dice carrots and celery and put them aside as well.
  3. Chop cauliflower heads and set them aside.
  4. Put cannabis butter in a large soup pot.
  5. Place the pot on the stove and melt the butter over medium heat.
  6. Then, add the diced onion.
  7. Cook for several minutes.
  8. Once the onion is brown, add the diced carrots and celery.
  9. Cook for 3-5 more minutes.
  10. Add the chopped cauliflower and parsley.
  11. Season the vegetables with salt and pepper. A tip here: Add at least ½ teaspoon of both pepper and salt.
  12. Stir the mixture well and reduce the heat.
  13. Cover the pot with a lid.
  14. Cook for about 15 minutes. A tip here: It is better to stir the mixture occasionally.
  15. Then, add vegetable broth and increase the temperature.
  16. Bring the soup to a boil.
  17. Once it starts to boil, reduce the heat to low.
  18. Remove the lid and let the mixture simmer.
  19. Put flour and milk into a large mixing bowl.
  20. Whisk the mixture until completely combined.
  21. Put four tablespoons of regular butter into a separate medium saucepan.
  22. Melt the butter over medium heat.
  23. Slowly pour the flour mixture into the saucepan. A tip here: Constantly whisk the mixture while pouring.
  24. Remove the saucepan from the heat.
  25. Slowly pour in one cup of half-and-half.
  26. Use a whisker to combine the ingredients.
  27. Then, add this milk and flour mixture to the simmering soup.
  28. Let the soup simmer for 15-20 minutes.
  29. Check if it is necessary to add more salt or pepper.
  30. Add bay leaves and let the soup simmer for 5 more minutes.
  31. Add freshly grated cheese and stir the soup until all the cheese is completely melted.
  32. Check if the cauliflower is fully cooked by tasting a small floret.
  33. Once the cauliflower is ready, turn off the heat.
  34. Before serving, put sour cream in a serving bowl.
  35. Then, add two ladles of soup to the sour cream and mix.
  36. Afterwards, pour in the rest of the soup and mix again.
