Recipe: Homemade Weed Coconut Macaroons

Tips Before You Start

Equipment Needed

Oven

Large biscuit sheet/tray

2 bowls

Double boiler with glass bowl

Spatula

Wire rack

Wooden spoons

Whisk /electric hand mixer

Ingredients

1 and ⅓ cups flaked coconut

⅓ cup sugar

Salt

Non-stick cooking spray

Chocolate chips/baking chocolate (white, dark or milk)

Chopped nuts (optional)

Vanilla extract

2 tablespoons cannabis butter

2 eggs or egg whites

2 tablespoons flour

Instructions

  1. Preheat the oven to 325 degrees.
  2. Take a large biscuit sheet or tray and grease it with a non-stick cooking spray.
  3. Take a bowl and add the flaked coconut, flour, sugar, and a pinch of salt.
  4. Mix the ingredients thoroughly with your hands. A tip here: Make sure you break all the large coconut or flour lumps.
  5. Once the mixture is ready, set it aside.
  6. Crack the eggs and put their whites into another bowl.
  7. Add ½ teaspoon of vanilla extract.
  8. Take a whisk or electric hand mixer and whip the egg whites well. A tip here: You need to get a shiny and frothy mixture.
  9. Add the whisked eggs to the flour and coconut mixture.
  10. Stir the ingredients with wooden spoons.
  11. Put 1-tablespoon scoops of this mixture on the greased biscuit sheet or tray. A tip here: There should be enough mixture to form approximately a dozen of scoops.
  12. Put the biscuit sheet into the preheated oven for 15-18 minutes, until biscuits turn golden brown. A tip here: They should not get burned on the bottom.
  13. While macaroons are baking, make some marijuana chocolate.
  14. Take a double boiler. Pour water in the pan and place the glass bowl above it.
  15. When the water starts to boil, add the cannabis butter.
  16. When the cannabis butter is melted, add the chocolate or chocolate chips. A tip here: Use a spatula to make the mix homogeneous.
  17. Once the macaroons are ready, take them out of the oven and let them cool for several minutes.
  18. Then, place them on the wire rack.
  19. Once the chocolate mix is ready, simmer it. A tip here: Do not turn the flame off to avoid the chocolate from solidifying.
  20. When the macaroons are cooled down, take each macaroon from the bottom and dip into the chocolate mix. A tip here: The more chocolate you add, the more potent your macaroons get.
  21. If you have chopped nuts, you can sprinkle the macaroons' tops with some of that.
