Recipe: Marijuana-Infused Skirt Steak With Chimichurri Sauce

Blender/Food processor

Double-lined zip-lock bag

Baking sheet with sides

Iron skillet/grill

Dinner plates


1 bunch flat-leaf parsley

10 cloves garlic

8 tablespoons extra-virgin olive oil

6 tablespoons cannabis-infused olive oil

¼ cup red wine vinegar

1 tablespoon lemon juice

1 tablespoon diced onion

2 teaspoons fresh rosemary

1 teaspoon black pepper

½ teaspoon salt

2 pounds skirt steak

4 medium Yukon Gold potatoes

1½ cups assorted mushrooms (could include trumpet, brown clamshell, forest, nameko, or maitake)

1 small onion

1 tablespoon minced garlic

Sprigs of fresh rosemary

Salt (to taste)

Pepper (to taste)


  1. Wash parsley and remove the stems.
  2. Put parsley into a blender or food processor.
  3. Add garlic, vinegar, diced onion, rosemary, lemon juice, regular olive oil, and 4 tablespoons of cannabis-infused olive oil.
  4. Season the mixture with salt and pepper and blend.
  5. Pour the mixture into a double-lined bag.
  6. Put the skirt steak into the bag as well.
  7. Place the bag in the refrigerator and let it sit there overnight.
  8. Let the skirt steak come to room temperature before proceeding.
  9. Preheat the oven to 325 degrees.
  10. Thinly slice the Yukon Gold potatoes and place them on a baking sheet.
  11. Peel and thinly slice onion. Place it on the baking sheet as well.
  12. Add mushrooms, minced garlic, and rosemary.
  13. Drizzle the mixture with 2 tablespoons of cannabis-infused olive oil and season with salt and pepper to taste.
  14. Toss the mixture.
  15. Place the baking sheet into the preheated oven.
  16. Bake for 30 to 40 minutes until the potatoes are golden brown and tender. A tip here: Do not forget to toss them gently with a spatula a couple of times.
  17. 10 minutes before the potatoes are done, heat an iron skillet or set up a grill.
  18. Cook the skirt steak for 3 to 4 minutes per side.
  19. Then, let the steak rest for about 5 minutes.
  20. Divide the potato mixture between dinner plates.
  21. Cut the skirt steak into manageable sections and place the pieces on top of the potato and mushroom mix.
